Mediterranean Naturipe Blueberry Quinoa Bowl

INGREDIENTS
- 1 cup cooked quinoa (cooled)
- 1/2 cup Naturipe blueberries
- 1/2 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, sliced
- 1/4 cup crumbled feta
- Handful of fresh parsley or mint, chopped
- Splash of Olive oil
- Juice of 1/2 lemon
- Salt & pepper
DIRECTIONS
- In a large bowl, toss quinoa, blueberries, tomatoes, and olives.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper to taste.
- Add feta and fresh herbs on top. Toss gently and serve.
