Mediterranean Naturipe Blueberry Quinoa Bowl

INGREDIENTS

  • 1 cup cooked quinoa (cooled)
  • 1/2 cup Naturipe blueberries
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup crumbled feta
  • Handful of fresh parsley or mint, chopped
  • Splash of Olive oil
  • Juice of 1/2 lemon
  • Salt & pepper

DIRECTIONS

  1. In a large bowl, toss quinoa, blueberries, tomatoes, and olives.
  2. Drizzle with olive oil and lemon juice.
  3. Season with salt and pepper to taste.
  4. Add feta and fresh herbs on top. Toss gently and serve.
