Cherry Burrata Salad

Fresh cherries up the cool summer dining game for this crowd pleaser. I like to pair it with crusty toasted bread as an appetizer or serve alongside grilled chicken for a full meal. The addition of a cured meat like prosciutto can add a bit of smoky saltiness for meat eaters.

INGREDIENTS

  • 3 cups arugula
  • 8oz burrata
  • 2 cups Naturipe cherries (pitted)
  • ¼ cup roasted salted almonds, coarsely chopped
  • 8 fresh basil leaves, torn if large
  • 1 Tablespoon olive oil
  • 1 teaspoon balsamic vinegar reduction
  • Salt and pepper to taste

DIRECTIONS

Spread arugula on medium serving platter and place burrata on top. Pile on cherries, almonds and basil. Drizzle with oil and vinegar and sprinkle with salt and pepper.
