Avocado Gnocchi

Avocados are packed with healthy fats, which help your body better absorb vitamins from other foods. These avocado gnocchi put a new, lighter spin on a comforting classic.

INGREDIENTS

  • 2 cups Naturipe frozen avocado chunks, thawed to room temperature
  • 2 cups A/P flour
  • 1 egg
  • 1 Tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 Tablespoon butter (browned if possible)
  • 1 Tablespoon coarsely-chopped fresh herbs of choice
  • 1 Tablespoon grated Parmesan cheese
  • 1 Tablespoon coarse breadcrumbs

DIRECTIONS

Place a medium saucepan filled ¾ with salted water over medium flame. While waiting for water to boil, prepare the pasta by mashing 1.5 cups of the avocado and mixing it with 1 cup of flour, egg, lemon, salt and pepper just until combined. Add the second cup of flour bit by bit until the dough is stiff enough to shape into 4 logs about the shape of a foot-long hotdog.

 

Cut into ¾ inch segments and roll each piece on the back of a fork while gently pressing down with your thumb. The desired result is a curl with lines on the outside. Place pieces on lightly floured cookie sheet until ready to boil.

 

Add gnocchi to boiling water and watch for them to rise to the top. Boil for an additional minute and use a slotted spoon to transfer to medium serving bowl. Add butter, herbs, Parmesan, a spoon or two of the cooking water, and remaining avocado chunks. Stir until butter is melted. Top with bread crumbs and additional salt and pepper to taste.
