Naturipe High-Protein Taco Bowl

IDEAL FOR: Dinner Lunch

A filling, protein-packed bowl featuring fresh avocado and a creamy Greek yogurt-based cilantro dressing.

INGREDIENTS

  • Bowls
  • 1 cup cooked lean ground beef
  • 1 Naturipe avocado
  • 1/2 cup black beans
  • 1/2 cup corn kernels
  • 2 Roma tomatoes, diced
  • 1/2 cup chopped lettuce
  • 2 handfuls of tortilla chips
  • Dressing
  • 2 tbsp avocado mayo
  • 1/4 cup plain 2% Greek yogurt
  • 1/4 cup fresh cilantro
  • 2 tbsp fresh lemon or lime juice
  • 2 tbsp water
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

DIRECTIONS

  1. Prep: Warm beans, corn, and beef if desired. Chop lettuce, tomatoes, and avocado.
  2. Blend: Prepare dressing by blending all dressing ingredients in a small blender until smooth.
  3. Assemble: Divide lettuce, tomatoes, avocado, beans, corn, beef, and chips between two bowls.
  4. Finish: Drizzle dressing over each bowl and serve immediately.
