Naturipe High-Protein Taco Bowl

A filling, protein-packed bowl featuring fresh avocado and a creamy Greek yogurt-based cilantro dressing.
INGREDIENTS
- Bowls
- 1 cup cooked lean ground beef
- 1 Naturipe avocado
- 1/2 cup black beans
- 1/2 cup corn kernels
- 2 Roma tomatoes, diced
- 1/2 cup chopped lettuce
- 2 handfuls of tortilla chips
- Dressing
- 2 tbsp avocado mayo
- 1/4 cup plain 2% Greek yogurt
- 1/4 cup fresh cilantro
- 2 tbsp fresh lemon or lime juice
- 2 tbsp water
- 1/2 tsp garlic powder
- Salt and pepper to taste
DIRECTIONS
- Prep: Warm beans, corn, and beef if desired. Chop lettuce, tomatoes, and avocado.
- Blend: Prepare dressing by blending all dressing ingredients in a small blender until smooth.
- Assemble: Divide lettuce, tomatoes, avocado, beans, corn, beef, and chips between two bowls.
- Finish: Drizzle dressing over each bowl and serve immediately.
