A holiday classic filled with Naturipe cranberry jam. The buttery almond cookies paired with tart cranberry filling create a festive, delicious treat.

DIRECTIONS

Make Filling:

  1. Simmer cranberries, sugar, water, lemon juice, and salt 8–10 minutes.
  2. Mash lightly; cool completely.
  3. Blend if you prefer a smooth filling.

Make Cookies:

  1. Cream butter and sugar.
  2. Add egg and vanilla.
  3. Whisk flours, baking powder, and salt.
  4. Combine dry and wet ingredients.
  5. Chill dough 1 hour.
  6. Roll dough ⅛–¼ inch thick.
  7. Cut full circles + window circles.
  8. Bake at 350°F for 10–12 minutes. Cool.
  9. Dust tops with powdered sugar.
  10. Spread filling on bottoms and sandwich.

Pro Tips:

For the best texture, slightly under-bake the cookies.
