A holiday classic filled with Naturipe cranberry jam. The buttery almond cookies paired with tart cranberry filling create a festive, delicious treat.
DIRECTIONS
Make Filling:
- Simmer cranberries, sugar, water, lemon juice, and salt 8–10 minutes.
- Mash lightly; cool completely.
- Blend if you prefer a smooth filling.
Make Cookies:
- Cream butter and sugar.
- Add egg and vanilla.
- Whisk flours, baking powder, and salt.
- Combine dry and wet ingredients.
- Chill dough 1 hour.
- Roll dough ⅛–¼ inch thick.
- Cut full circles + window circles.
- Bake at 350°F for 10–12 minutes. Cool.
- Dust tops with powdered sugar.
- Spread filling on bottoms and sandwich.
