Naturipe Blackberry & Cranberry Pan Sauce with Turkey Drippings

Elevate your holiday turkey with this glossy, tangy-sweet pan sauce that’s full of flavor. Made with Naturipe blackberries and cranberries, red wine, and rich turkey drippings, it adds a vibrant, fruity finish to your main dish. Easy to prepare and beautifully balanced, this sauce also pairs well with roasted chicken or pork for a festive touch.

INGREDIENTS

  • ½ cup Naturipe Blackberries
  • ½ cup Naturipe Cranberries (fresh or frozen)
  • 1 cup turkey drippings (from your roasting pan, skimmed of excess fat)
  • ½ cup turkey or chicken stock
  • ½ cup dry red wine (such as Pinot Noir or Merlot)
  • 1 tablespoon balsamic vinegar (optional, for depth)
  • 1 tablespoon unsalted butter
  • 1–2 teaspoons brown sugar or honey (to balance tartness)
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)
  • Salt and freshly cracked black pepper, to taste

DIRECTIONS

  1. Deglaze the pan: After roasting your turkey, pour off all but 1 tablespoon of drippings. Place the roasting pan over medium heat and add red wine. Scrape up any browned bits from the bottom with a wooden spoon.
  2. Add berries and stock: Stir in Naturipe Blackberries, Cranberries, and turkey stock. Simmer for 8–10 minutes, until the berries soften and release their juices.
  3. Balance the flavor: Stir in balsamic vinegar (if using), brown sugar or honey, salt, and pepper. Adjust sweetness or acidity to taste.
  4. Thicken (optional): If you prefer a thicker sauce, stir in the cornstarch slurry and simmer 2–3 more minutes until glossy.
  5. Finish and serve: Remove from heat and whisk in butter for a silky finish. Strain for a smooth sauce, or leave the berries in for rustic texture.

Chef’s Tip:
This sauce also pairs beautifully with pork tenderloin or roasted chicken, and leftovers make an amazing sandwich spread.
