Thick-cut bacon, candied to sticky perfection, finished with an irresistible, glossy, and chef-approved Candied Blackberry Glaze made with fresh Naturipe blackberries.
INGREDIENTS
- 1 lb thick-cut bacon
- 1/2 cup fresh Naturipe blackberries
- 1/4 cup brown sugar
- 2 tbsp maple syrup
- 1 tbsp balsamic vinegar
- 1/4 tsp black pepper
- A pinch of salt
DIRECTIONS
Glaze Instructions:
- In a small saucepan over medium heat, combine the fresh blackberries, brown sugar, maple syrup, balsamic vinegar, black pepper, and a pinch of salt.
- Bring the mixture to a gentle simmer, mashing the blackberries with a fork as they soften.
- Cook for 5–7 minutes until the mixture thickens into a glossy, sticky glaze. Remove from heat and set aside.
Recipe Instructions:
- Preheat your oven to 375°F (190°C) and line a rimmed baking sheet with aluminum foil or parchment paper. Place a wire cooling rack on top of the sheet.
- Lay the thick-cut bacon strips flat in a single layer on the wire rack.
- Bake the bacon for about 15 minutes, or until it begins to render its fat and starts turning translucent, but isn’t fully crispy yet.
- Remove the bacon from the oven and generously brush or spoon the Candied Blackberry Glaze evenly over each strip.
- Return the bacon to the oven for another 10–15 minutes, watching closely so the sugar doesn’t burn, until the glaze is bubbling, sticky, and deeply caramelized.
- Let the bacon cool for 5 minutes on the rack (the glaze will harden slightly as it cools), then transfer and enjoy!
