25 Days of Cookies for Your Holiday Baking: Day 12, Triple-Chocolate Cookie and Strawberry Ice Cream Sandwiches

December 12, 2013

Every day in December through Christmas, we’re sharing a cookie recipe. Forget the 12 Days of Christmas—these are the 25 Days of Cookies.

Are you detecting a trend yet in our 25 Days of Cookies? Day 10′s cookie was twice-baked; Day 11′s had triple ginger; and now we’ve got triple-chocolate cookie and strawberry ice cream sandwiches.

Yes, behind this dessert’s gargantuan 16-syllable name lurks an even larger flavor, something to lift your tired taste buds, something that dwarfs any and all cookies that stand in its way. It starts with the triple-chocolate cookies, which feature chocolate chips, 10 ounces of melted bittersweet chocolate, and cocoa powder. This is, of course, a formidable cookie in its own right,  but we say, add some strawberry ice cream. Using fresh fruit and some vanilla extract, you get an ice cream that’s the ideal complement to the chocolate massacre you’ve unleashed. Put it all together and you have a well-balanced sandwich. If, like us, you’re slowly losing yourself in the throes of a cookie mania, this is the sort of sandwich you’ll want to pack yourself for lunch.
