Nutrition & Health

Raspberries are an excellent source of vitamin C, folate, iron, potassium, antioxidants and disease-fighting ellagic acid. Ellagitannins, a family of compounds almost exclusive to the raspberry, are reported to have anti-cancer activity and contribute to the raspberry’s antioxidant power. They are also a great source of fiber, which has been found to lower cholesterol levels. The beautiful red color is from anthocyanins, an antioxidant.

When selecting raspberries, pick brightly colored, plump berries.  As with all berries avoid any that show signs of spoilage or mold and be sure they are free of dents or bruises.  Fresh raspberries are fragile and highly perishable.  Keep them in your refrigerator and use within two days.  Avoid washing raspberries before serving. Instead, gently spray with a fine mist to avoid crushing them.

Interesting Fact: Red raspberries grow on bushes that are native to Turkey, and they were gathered by the people inhabiting Troy from vines growing at the foothills of Mt. Ida around the time of Jesus. Therefore, these Romans are thought to have spread cultivation throughout Europe. In medieval Europe, wild raspberries were considered both medicinal and utilitarian. Their juices were used as dyes in paintings and illuminated manuscripts.
