1 lb salmon fillet, cut into 4 portions and poached
1 teaspoon olive oil
2 shallots, finely chopped
2 tablespoons fresh basil leaves, chopped
2 tablespoons honey
2 tablespoons balsamic vinegar

Ingredients
1 package (5 to 6 oz.) fresh Naturipe© Farms blueberries, washed1 lb salmon fillet, cut into 4 portions and poached
1 teaspoon olive oil
2 shallots, finely chopped
2 tablespoons fresh basil leaves, chopped
2 tablespoons honey
2 tablespoons balsamic vinegar
Directions
In small skillet, heat olive oil over medium heat. Add shallots and saute for 3 minutes. Stir in basil, honey and vinegar. Simmer for 5 to 6 minutes, stirring occasionally until mixture thickens. Stir in blueberries and simmer for 1 minute. Pour into a bowl and cool. Place 1/3 cup blueberry basil sauce on each plate.
