1 teaspoon raspberry extract
1 lb. loaf low-fat cinnamon raisin bread, sliced
1 teaspoon cinnamon, divided
Fat-free whipped topping, thawed (optional)
Fresh berries for garnish (optional), rinsed and drained

Ingredients
2 1/2 cups fresh Naturipe® Farms blueberries,rinsed, drained and divided

rinsed, drained and divided
2 1/2 cups fresh Naturipe® Farms raspberries,
rinsed, drained and divided
2 1/2 cups fresh Naturipe® Farms blackberries,
rinsed, drained and divided
1 cup sugar
2 tablespoons lemon juice
1 tablespoon lemon zest
1 teaspoon raspberry extract
1 lb. loaf low-fat cinnamon raisin bread, sliced
1 teaspoon cinnamon, divided
Fat-free whipped topping, thawed (optional)
Fresh berries for garnish (optional), rinsed and drained
Directions
Combine 1 1/2 cups blueberries, strawberries, raspberries, 1 cup blackberries, sugar, and 2 tablespoons lemon juice in a large saucepan and bring to a boil over medium heat. Cook, stirring occasionally, 7-8 minutes until mixture thickens and berries pop. Remove berry mixture from heat; stir in remaining berries, lemon zest and raspberry extract. Spray 1 1/2 quart souffle dish with cooking spray. Spoon 1/2 cup berry mixture into bottom of dish; top berries with several bread slices. Sprinkle bread with 1/2 teaspoon cinnamon. Repeat layers, finishing with bread layer on top. Sprinkle with cinnamon and cover dish with plastic wrap. Place a heavy dish on top to weigh down and refrigerate at least 6 hours or overnight. When ready to serve, invert bread pudding onto serving plate. Top with fat-free whipped topping and garnish with fresh berries, if desired.Nutritional Info
