Strawberry Oatmeal Pancakes

Ingredients

2 large egg whites, beaten until frothy
2 cups skim milk
2 teaspoon vanilla
1 1/2 tablespoons, brown sugar
1 1/4 cups oatmeal
3/4 cup all-purpose flour
3/4 cup whole-wheat flour
1 tablespoons baking powder
3 cups fresh sliced fresh Naturipe® Farms strawberries, rinsed and drained
Sugar-free syrup or sugar-free strawberry preserves, melted (optional)

Directions

Combine egg whites, milk, vanilla, brown sugar and oatmeal in medium bowl and mix lightly until blended; let stand 10 minutes until oatmeal is softened. Gradually add flours and baking powder; mix well, just until ingredients are blended. Do not overmix. Fold in sliced strawberries. Spray large nonstick skillet with cooking spray and heat over medium heat. Pour 1/4 cup batter per pancake into skillet; cook until bubbles form on top. Flip pancakes and cook until golden brown on both sides. Remove pancakes from skillet, wrap in foil and keep warm in 300 degree oven while cooking remaining batter. Remove skillet from heat and respray with cooking spray. Repeat process with remaining batter. Serve pancakes with sugar-free syrup or melt preserves in microwave on high for 1 minute and serve over pancakes.
