Raspberry-RichTurkey Salad

A tart, tangy salad loaded with fresh Naturipe® Farms raspberries and skinless, low-fat turkey tenders.

Ingredients

1 cup fat free plain yogurt
1/2 cup fresh Naturipe® Farms raspberries, rinsed and drained
1 tablespoon raspberry or red wine vinegar
2 teaspoons sugar
4 cups fresh Naturipe® Farms raspberries, rinsed, drained and divided
2 cups cooked and cubed boneless, skinless turkey tenders
3/4 cup diced green onion
1 cup diced celery
1 cup diced red bell pepper
16 oz. Belgian endive, rinsed and drained
1/4 cup sliced almonds

Directions

Combine yogurt, 1/2 cup Naturipe® Farms raspberries, vinegar and sugar in blender and process until smooth and creamy. Pour into covered container and refrigerate 1-2 hours. Combine turkey, green onion, celery and bell pepper in large bowl; spoon yogurt dressing over top. Fold in 2 cups Naturipe® Farms raspberries and mix lightly until coated. Cover and refrigerate at least 1 hour before serving. Arrange endive leaves on 4 plates; divide turkey salad and place on top of lettuce leaves. Garnish with remaining Naturipe® Farms raspberries and almonds.
