Blueberry Tabouli

Ingredients

1/2 cup dry bulgar wheat
1/4 cup and 1 tablespoon fresh lemon juice
1 teaspoon crushed garlic
3 teaspoons extra virgin olive oil
1/2 cup chopped parsley
1/8 cup sliced green onion
1/4 teaspoon salt
1 1/2 cups fresh Naturipe® Farms blueberries, rinsed and drained

Directions

In a bowl, pour 3/4 cup boiling water, and lemon juice over bulgar wheat. Cover and let rest until plump, about 1 hour. Stir in garlic, olive oil, parsley, onion and salt. Just before serving, stir in blueberries.
