Cranberry Stuffed Pork Chops

A flavorful addition to a classic family favorite.

Ingredients

1 cup Naturipe© Farms cranberries, rinsed and drained
4 1 1/2" thick pork chops
1/4 cup pistachios, toasted
2 tablespoons butter
1 stalk celery, washed and diced
2 shallots, peeled
1 tablespoon fresh parsley, minced
1/2 cup fresh breadcrumbs
1 teaspoon fresh rosemary
1/8 teaspoon ground sage
1/8 teaspoon dried thyme
Salt to taste

Directions

Turn on broiler.
Prepare pork chops by slicing a horizontal slice across meat, creating a pocket.
Heat butter in a skillet and add celery, shallots, breadcrumbs, parsley, rosemary, sage and thyme, saute until vegetables are transparent.
In a food processor, chop cranberries and pistachios.
Combine berry and bread crumb mixture, divide into four parts.
Stuff 1/4 of stuffing into each chop. Brush with olive oil and sprinkle with garlic salt.
Broil about 5 inches from heat for about 11 minutes on each side.
