Cranberry Chocolate Muffins
These sweet-tasting muffins are sure to get the kids out of bed in the morning.

1 cup juice, apple or orange
1 cup sugar
1 cup semi-sweet chocolate chips
2 cups unbleached flour
2 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
2 eggs
1 teaspoon vanilla
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup vegetable oil
Add cranberries and cook until berries pop, about 6 minutes, do not overcook. Remove from heat.
Stir in chocolate chips until smooth. Let cool.
In a medium bowl, combine flour, baking powder, baking soda, salt and cinnamon, set aside.
In a medium bowl, whisk together eggs, vanilla, sugars and oil. Add cranberry mixture and stir until incorporated.
Pour all liquid mixture into dry mixture, and stir until dry ingredients disappear.
Pour into muffin tins.
Bake at 350° for about 25 minutes, until tester comes out dry.
Tip: Try using two 9 x 5 loaf pans instead, just add a longer baking time of about 45 minutes.
