Blueberry Ketchup

A great way to add flavor to your favorite meal

Ingredients

2 cups blueberries
1 tsp chopped garlic (about 1 clove)
1 small shallot, minced
6 Tbs brown sugar
1/4 cup apple cider vinegar
1 Tbs lemon juice
1/4 cup finely chopped onion
1/4 tsp ground coriander
1/8 tsp ground cinnamon
1 tsp kosher salt
1/4 tsp freshly ground black pepper

Directions

Combine all ingredients in a medium saucepot over high heat. Bring to a boil, reduce to a simmer and cook uncovered (stirring occasionally) for 25-35 minutes, or until thickened and syrupy. Cool slightly, transfer to a blender and puree. Push through a fine mesh strainer, taste and adjust seasoning if necessary.
