3/4 cup canned pumpkin

1/2 cup unsweetened applesauce
1/4 cup walnut oil

Ingredients

Directions
In a large bowl, combine flours, baking soda, salt, cinnamon, and ginger. In a medium bowl, stir together pumpkin, eggs, brown sugar, applesauce, and oil. Combine dry ingredients with wet ingredients, mixing until just incorporated. Stir in blueberries. Pour batter into muffin tins sprayed with vegetable oil and bake at 350 degrees for 25-30 minutes, or until a toothpick tests clean.Nutritional Info
