I love using fresh and frozen berries in my breakfast recipes. They lend a plethora of vitamins, minerals and antioxidants to any recipe. Plus, they taste absolutely amazing. Who needs to add sugar to a recipe when it’s filled with sweet, juicy berries?

During the week, I’m often whipping up delicious, healthy smoothies that are packed with blueberries, cherries or raspberries. My boyfriend often requests pancakes or baked goods during the weekend so on weekend mornings, you’ll often find me making homemade fruit filled pancakes or delicious muffins or pastries. One of my go-to fruits to use in these recipes is blueberries.

Blueberries are sweet, juicy and slightly tangy. I find that when I use them in smoothies, I don’t need to add any extra sugar as they sweeten the smoothie perfectly. They’re perfect in pancakes because they add an extra burst of juicy flavor. They’re my favorite fruit to use in muffins and pastries because well, who can resist biting into a soft, fluffy muffin or pastry filled with juicy blueberries?

I love these Blueberry Brie Pastry Tarts because they’re easy to make and they’re packed with flavor. They aren’t too sweet. In fact, the brie cheese and buttery puff pastry lends more savory notes to these tarts. Flaky, all natural puff pastry is topped with creamy brie cheese, fresh blueberries, sliced almonds and a drizzle of honey. Then these pastry tarts are baked to perfection. Go ahead, grab a pastry…or two. They’re that darn good.
