Guest Post | Recipe Runner – Grilled Chicken with Blueberry Barbecue Sauce and Corn Salsa

Hi everyone! I’m Danae from Recipe Runner! I’m so happy to be here today and to share one of my favorite summer dinners with you, Grilled Chicken with Blueberry Barbecue Sauce and Corn Salsa. This meal is perfect for hot days when you don’t want to heat up the kitchen or for those of you who just love cooking outside on the grill.

I created this dinner as part of the Naturipe #EatTheRainbow recipe challenge. The challenge is being held in July and August and during that time myself and four other bloggers will be sharing our unique and delicious recipes featuring our favorite Naturipe berries!

Blueberries are by far one of my favorite berries and it’s a good thing because these little guys are packed with vitamins and antioxidants! I think a lot of times we associate blueberries with breakfast, snacking, adding into salads, or making desserts with. However, they lend a delicious and unexpected berry flavor to savory items as well, like this barbecue sauce.

Let’s talk about the star of this tasty dinner, the blueberry barbecue sauce. The sauce starts with a simple homemade barbecue sauce recipe, which is then taken to a whole new level with a box of fresh blueberries.  The blueberries add a slight tartness and wonderful berry flavor to the sweet and tangy barbecue sauce. Along with tasting great, the sauce is a beautiful dark purplish-blue color that stands out when paired with the grilled corn salsa and chicken.

The blueberry barbecue sauce can either be used as a glaze and brushed on the chicken as you are grilling it, or it’s just as delicious spooned on top of the chicken or used as a dipping sauce. I decided to serve the chicken and barbecue sauce with a grilled corn salsa. I figured since I already had the grill going why not throw on some fresh corn and a red bell pepper as well. The salsa is only mildly spicy and has a great charred smoky flavor that is perfect alongside the sweet and tangy blueberry barbecue sauce.
